Less Isn’t More: Developing the Confidence to Fuel Properly as a Runner

Many runners believe that eating less, training harder, or striving for the “perfect” body will lead to better performance. In reality, comparison, anxiety, and perfectionism often push runners toward underfueling, burnout, and a strained relationship with food and their bodies.

These patterns are incredibly common in the running world and often lead to under fueling and under performing. This 75-minute live Zoom workshop brings together Sarah Nardoni, a former Division I track and cross country coach and mental health professional alongside Jackie Hendrickson, a registered sports dietitian and former Division 1 athlete, to explore how mindset, body image, and nutrition intersect in the running world.

Together, we’ll unpack how common thought patterns—such as comparison, fear of weight gain, and performance pressure—can quietly undermine both health and performance. You’ll gain practical tools to recognize these patterns, build confidence around fueling, and shift toward a more supportive, sustainable approach to nutrition.

Jackie Hendrickson

Hi! I'm Jackie! 


I'm a registered dietitian with a masters of public health from Utah State University. I live in beautiful Cache Valley, Utah with my husband and three little boys. We love exploring the mountains, gardening, watching movies, and going on walks/runs together.


My purpose and passion as a registered dietitian is to help YOU achieve your athletic potential through proper fueling and nutrition. I focus on intuitive eating principles to help you develop a healthier relationship with food and your body.

I am a firm believer that when we learn to respect our body enough to fuel it properly & gain a healthy relationship with food & ourselves, we are better able to reach our potential in our long-term performance as endurance athletes. 

By learning to do this myself, I have been able to find personal success & achievement with my own running goals. Gaining a healthy relationship with food & my body has made me hopeful & excited to see what my running future holds.

Sarah Nardoni

Hi! I am Sarah!

I spent 10 years as a Division I Track & Cross Country Coach at Utah State University, where I helped lead seven teams to the NCAA Cross Country Championships, 22 All-American honors and 36 school records. During my coaching career, I consistently saw that mindset was often the biggest limiting factor in athletic performance—an insight that continues to drive my work with athletes today.

I hold a Master’s degree in Social Work from Utah State University and am Mind-Body Bridging Certified. I am deeply passionate about helping athletes strengthen their mindset. Through my combined background in counseling and high-level coaching, I bring a unique and holistic approach to performance development.

Outside of coaching, I enjoy spending time in the mountains trail running with my dog, hiking with my husband and our 18-month-old daughter, and snowboarding. I also love reading and traveling and am always planning the next adventure!
